Vegetarian Quinoa Salad

Ingredients:
1 c. quinoa (prepared according to instructions on package)
1/2 orange pepper, diced
1 medium ripe tomato, diced
1 medium cucumber peeled and diced
1/2 container sliced mushrooms, diced
1/4 c. fresh parsley, chopped
Dressing:
2 tbsp. fresh squeezed lemon juice
2 tbsp. extra virgin olive oil
1/4 tsp. salt
fresh ground pepper
pinch of cayenne pepper
Directions:
Prepare quinoa according to directions on package. Let chill completely (if in a hurry, don't be afraid to chill in the freezer; just don't forget you put your quinoa in there!). In the meantime, combine all ingredients for the dressing and whisk until blended. Combine quinoa, veggies, and dressing in a medium bowl and stir until mixed. For additional flavor, add hot pepper flakes and enjoy!
