Spaghetti Squash "Pasta"
Saturday, April 28, 2012
Courtesy of a girlfriend/co-worker, Emily. Enjoy!
Ingredients:
2 lbs ground turkey.
2-3 medium zucchini sliced & quartered
2 onions chopped
2 packages sliced mushrooms
5 cans organic spaghetti sauce (no sugar, no salt)
2 tsp garlic powder
1 tsp cheyenne pepper (substitute with tabasco sauce if desired)
Directions:
Sauce: brown ground turkey in olive oil. Combine with remaining ingredients in a large pot. Simmer for around an hour. Serve over spaghetti squash.
Spaghetti Squash: Cut in half, scoop out seeds & pulp, put in microwave for 15 minutes (per half). Your squash will be "volcanic hot," so be sure to remove/handle using pot holders. Using a fork, scrape the noodle-like flesh out into a bowl, serve, & enjoy.
Yields enough to feed a small army (hee hee). Also very diet/user friendly & tastes great (it was Nick approved, you know!!) Bon Appetit :)
