Lifestyle Makeover: Eggplant Parm

Eggplant Parm a-la Christina/17-day-diet*

Ingredients:
1 large eggplant cut into ¼ in. slices
3 large eggs – whites only
1 container reduced fat or fat free parmesan topping
2 c. Contadina sauce
Salt
Pepper
Oregano
Garlic powder

Preheat the oven to 400.  Beat egg whites with 3 tbsp. water until slightly foamy.  Slice eggplant into ¼ in. slices.  Coat both sides in eggwhites then dip/cover in parmesan cheese.  Use fat free cooking spray to lightly coat the bottom of a baking dish, lay slices in dish, then coat lightly with cooking spray.  Bake in the oven for 20 minutes.  In the meantime, mix 2 c. sauce, salt, pepper, oregano, & garlic powder (enough to your liking for taste/flavor).  Cover baked eggplant with sauce and bake for an additional 10 minutes.  Serve with a dash of parmesan cheese.  Yields 2-4 servings.

Never been a huge eggplant lover... but, you have me wanting to try this recipe! YUM!
