This does wonders for my diet, I tell ya... Wonders. I think avoiding a night time treat is almost as difficult as bridging the 3-5pm munchies gap (that awkward time after work but before dinner time that you just want to raid your pantry and eat everything). So to curb these cravings I've had to get a little creative. I try avoiding fruit in the afternoon, attempt to stick low on the carb-o-meter, and sweets are entirely a no no (well, mostly), thus, I've retorted to cooking veggies in different ways. A more recent favorite has become the eggplant chip. MMM MMM good.
to make them happen:
preheat the oven to 400*F
rinse, peel, + slice eggplant into 1/4 inch slices
in a small bowl, beat 3 egg whites w/ 3 tbsp. water (until slightly foamy)
coat eggplant with egg whites + dip in fat free parmesan topping (I like Wegman's brand)
place on cookie sheet that has been drizzled with EVOO
spray I can't believe it's not butter or cooking spray on eggplant
bake in oven for 20+ minutes (depending on your crunchiness preference)
Serve with fat free ranch dressing or low carb marinara for an added treat + enjoy :)
