Spinach Artichoke Dip

Monday, September 09, 2013

Football is back in full swing and being that we just got our new sofas in the family room & our tv is up and mounted, we are hoping for many a football watching visitor.  This past weekend I put my cooking skills to the test for our impromptu visitors, and made my mom's spinach artichoke dip.  Although it's not quite as good as her rendition, it was tested & approved by 5 guys, me, and my mom herself.

Ingredients:
1 (10 oz.) pkg. frozen chopped spinach, thawed | 1 (6 oz.) jar marinated artichoke hearts | 3-4 large garlic cloves, chopped until fine | 1/2 c. mayo. | 1.5 (8 oz.) packages cream cheese, softened | 2 T. lemon juice | 1 c. grated Parmesan cheese | 1.5 c. fine, dry breadcrumbs

Directions:
Drain spinach, press between layers of paper towels.

Drain & chop artichoke hearts

Combine spinach and artichoke hearts, garlic, and next 4 ingredients, stirring well.

Spoon into a lightly greased 11 x 1 x 1.5 inch baking dish

Sprinkle with breadcrumbs.  Bake at 375 for 25-35 minutes until breadcrumbs brown.

Best served with scoops, assorted crackers, or breadsticks.
What are your favorite football watching snacks?  We're big dip people over here and have also been known to make buffalo chicken dip now and again :)

GO STEELERS!
